Repointing rock foundation

I am curious about what type of cement, mortar,etc to use with rock foundation. I live in north jersey and I know you can't just throw in some cement when repointing. Any help would be great.

Repointing rock foundation

Figure what is there and repoint with the same. Pics, date of original construction would help.
