How long to wait after patching concrete shower slab?

I've opened up the slab under a shower to replace the trap. I planned to put gravel around the pipes and then put concrete to repair the slab. But I read somewhere you need to wait 7 days for the concrete to cure, keeping it wet all the time. I had not planned on this.
Oh'Mike mentioned using sackcrete. Does this material cure faster?
Also, the entire slab under the shower is slightly out of level. Should I try to fix this at the same time I fill the hole around the trap?

What are you going to do for the pan?

Premade pan or custom ?

I've never waited 7 days----one day---never had an issue----

That wait is just what I read somewhere. If I can pour and work on it after 24 hours so much the better.
I plan either a shower pan or schluter kerdi pan. The slab is only slightly out of level, I don't know if it that will be critical.

Typically a bed of masons mortar is placed under a new pan to ensure a solid base---so some leveling can be done at that time-----

out of level in what direction? toward the drain or away from it?
