Do not use 3 layers of 5/8 sheetrock. All insulation has some sound proofing effects. Many products out there. Google it and make your pick! Ya can't go wrong! There's even sound proofing sheetrock! Many options. Good luck, and may your wood floors be quiet!

Search here; been discussed a lot. Basically, mass, seal any holes, and insulation. QuietRock or doubled standard sheet rock, fiberglass insulation (if you can stand to touch that crap).
