question on foam board installation


I have a question regarding installation of foil faced insulation board.
I am wrapping up construction of my 16' x 16' workshop/man cave.
6/12 roof pitch
composition shingles on 30# felt on 1/2" plywood on 2x6 rafters 16" o/c.
Part of ceiling joist are decked for storage, rest open (no ceiling/open attic/exposed rafters).
Want to install 3/4" or 1" foil faced insulation board between the rafters (as to leave rafters exposed).
Question: Can I install the foil faced (both sides) insulation board up hard against the bottom of the plywood roof sheathing without threat of moisture buildup?
Any advice or suggestions is appreciated.

Yes, plan on heating and cooling it at some point.
I am located in Northeast Texas.

If up against the roof sheathing, you would eliminate the venting space and it would be:http://www.buildingscience.com/docum...r-all-climates
