insulating hip roof (eaton's catalog home)

ok, so this is a new thread to specifically address the insulating of my 11/12 rectangular hip roof on my gut and remodel of a old time eaton's catalog house in Saskatchewan, Canada.

As I see it I have these 2 options:

install 1x strips in rafter bays, drill holes in hip rafters, ridgid foam over 1x's, flash sprayfoam, knee walls and blow in insulation at the top and on the outsides, continuous ridge vent.

spray foam the entire thing, thereby creating a hot roof, and have a powered ventilation fan near the ridge

although not ideal, could I also insulate the roof and floor of the attic?

It's 640 sq ft. of attic space, currently.
