Uneven Ceiling

The wall is 16 ft so two 8 ft boards fit perfectly. The problem I have is there is a section of the ceiling that bows slightly due to the way the wall was constucted (not changing this). If I get the right side flush, the left side is out. If I get the left side flush, the right side is out.

Option 1 - Get the right side against the wall and ceiling flush leaving just the left out. This will put the board at a slight angle making a butt joint tough to match.
Option 2 - Left side flush leaving the right ceiling and wall out 1/4 inch or less and hope the mud hides everything.
Option 3 - Furrow out some of the board where the cieling dips to allow a better fit on either side of the dip.

I am leaning toward option 2 but would love to get some opinions on different options. Thanks!!

Set the board level, or scribe it in for a tighter fit.
