Spackle Properties and favorite topping compound

Doing a gut reno of 1 wall....and a bit of plaster repair here and there.

Just curious....what is the properties of spackle (for oddball nail fills).
Is it slight softer than easysand but heavier than regular JC.

On a quick test, today, I 'm able to do 2 coats of Easy Sand and it's looking pretty good. What's the Flavor of the Month when it comes to topcoat. Good 'old regular Green Top Joint Compound or the lightweight Blue Top JC which I have never used...

I like the hard set powder...I mix smaller batches, and I work it just as good with a little more effort on the 2nd coat followed by a wet blade...and it looks just as good without the wait of air drying compound.
