Plaster repair around new windows

We replaced 27 windows in our 120 year old masonry house. The wood frames were completely gone so I had to gut everything down to the masonry and completely reframe them.

The 2" deep plaster around some of the windows was damaged in the process leaving as much as a 7" gap between the remaining plaster and the extension jamb.

I've never dealt with plaster before, so I'm not sure if I just fill that space in with compound or what. Any advice would be helpful.
