Drwall/Plaster integration in 1956 kitchen and......

Hi Every1,
I had a great experience with my first HUGE project through this forum. Now comes a small one but just as important.
I'm doing a pass through window/bar for a friend of mine on a kitchen in southern California.
Now the whole place is done in thick plaster and cement board under. That's been removed on two side of the kitchen wall and and framed out then slapped with two pieces of drywall together that approximate the thickness of the plaster. I'm near the area where i will have to figure out how to best seam the two and because of the shelving unit next to corner bead, I can't just take out that bead. I NEED to find a way to integrate that corner bead (?). My Uncle, a GC mentioned splicing the end of the new drywall but i've only done drywall once or twice and i had someone else to the taping and mudding.
I plan on creating a clean line as possible by chipping down the plaster where the corner stud meets the header with an old chisel. See pic.
Any help or advice would be appreciated. I'm basically looking for hints on the few seam that will have plaster on one side and drywall on the other.
