Can I retexture an exiting ceiling with panda paw finish

I am remodeling the kitchen and removed the soffits over the old cabinets and moved a dividing wall. My question is am I better to or can I float a new coat of mud over the remaining ceiling and redo the panda paw finish? If so do I need to knock down most of the high spots on the existing ceiling and what if any tricks are there to make it look good.

Thanks in advance
Ed

I see no reason why not, but as always, photos of the area(s) in question will help us help you better.
